Absolutely delicious and packed with nutrition!

Pesto is an awesome way to pack a lot of nutrition into a small quantity of food. I am definitely in favor of adding super charged sides into majority of my meals. You can keep things simple and exiting at the same time. I love the idea of PLANTIFUL bowls designed with a purpose to nourish one’s body and satisfy one’s taste buds. I swapped calories for easy to digest and dense in nutrients long time ago.  It is important to have a good relationship with food that focuses on positives rather than calorie restrictions and the fear of imaginary negative outcome. Eating food that delivers all that your body needs will make you feel more satisfied quicker and by so doing, with time you will consume way less food and your body will self-regulate creating balance and reducing the need to overeat

 

Getting back to the main character of today’s post – coriander and pumpkin seed pesto.

 

I absolutely love it! It is full of flavor and has multiple health benefits. It is super green so we all know that greens are super alkaline. This is an obvious thing. Let’s talk about the unique health property of coriander. This ordinary herb has an extraordinary ability to mobilize heavy metal pollution out of our cells. If we use it in large quantities  we should definitely consider the use of binders to help our body evacuate mobilized toxicity safely out of the system. I am thinking chlorella, activated charcoal, zeolite or bentonite clay. It is an extensive subject so, I will write more about it in a separate article dedicated to safe detoxification.

 

Why do I mix coriander with pumpkin seeds?

 

Coriander mobilizes toxicity and the nourishment contained in pumpkin seeds supports the liver function and protects DNA from getting damaged. Wherever there are free radicals there is a need for anti– oxidants!

 

Pumpkin seeds are rich in zinc,  selenium, magnesium, manganese, copper, essential fatty acids, protein and phytosterols. They are a powerhouse of protective nutrition so use them as often as you can in your food creations.

 

Enough of this health talking! Let’s get to it!

 

Ingredients

Bunch of fresh coriander chopped

0⁄5 cup of activated pumpkin seeds { soaked in water for 1 hour, and rinsed before using}

1 clove of garlic pressed

1⁄3 cup of olive oil

squeeze of lemon juice

pinch of Himalayan pink salt

Touch of black pepper

 

Preparation

Place all the ingredients in the food processor and blend till desired consistency has been reached
